Job Title Head Chef Reports to Restaurant Manager Purpose of job To manage the smooth and efficient operation of the kitchen to ensure the company’s reputation for food quality is maintained at all times. Responsible for: 1 Developing a talented kitchen brigade to ensure the company’s reputation for food quality is enhanced with customers. 2 Ensuring the company’s Hygiene, Health and Safety Policies and Procedures are followed at all times. 3 Equipment: all fixed and removable equipment and kitchen utensils. Duties & Responsibilities: 1 Plans menus to achieve and maintain the budgeted food cost / gross profit. Prepares dish specifications. 2 Adheres to the company’s Purchasing Policy. Ensures supplies are properly issued, used and accounted for. Carries out stock takes and food rotation procedures. 3 Allocates duties to kitchen staff and supervises them in the cooking of dishes, giving technical advice and guidance when necessary. Personally prepares dishes. 4 Controls portion size and monitors waste. 5 Inspects dishes for quality, temperature and attractiveness before serving. 6 Deals with complaints about food in accordance with the Company’s Policies and Procedures. 7 Provides development training for the kitchen brigade. Inducts new staff. 8 Ensures compliance with Statutory and Company Regulations concerning the hygiene, health and safety of staff, food and equipment. 9 Maintains records relating to food production activities and supplies information as required by the Catering Manager. 10 Demonstrates good standards of customer service. 11 Prepares and participates in special functions, which may be outside normal working hours. Ensures that staff clean and maintain all equipment and fittings in a safe and proper manner and record on the cleaning schedule. 12 Carries out regular chef’s meetings. 13 Completes annual appraisals of kitchen brigade.
